Seafood pasta
Ingredients (for 2):
- approx. 200g fresh or frozen mix of seafood (prawns, mussels, squid)
- pasta e.g. tagliatelle or spaghetti
- 1/2 red onion
- 2 garlic cloves
- Bunch of cherry tomatoes, cut into halves and quarters
- 1/4 red pepper, finely chopped
- 125ml pouring cream (I use lactose free)
- Olive oil and butter
- Salt, pepper, oregano, fresh parsley to taste
Method:
1. Prepare the seafood if using fresh produce.
2. Start boiling the pasta.
2. In a large frying pan, fry the seafood with a little olive oil. Once ready, leave aside in a separate dish, keeping the oil and juices in the pan.
3. On that same pan, sautee the onion on low heat, adding a drop of olive oil if needed.
3. Add the butter, crushed garlic, oregano and cherry tomatoes and fry for a little longer.
4. Add the seafood and fresh parsley into the pan and stir for a couple of minutes
5. Take the pan off the heat, pour in the cream and stir until well combined. If the sauce seem too runny, return to the heat for about a 1 minute
5. Serve, mixed with pasta.
