Ingredients (makes 2 portions):
1/4 cup coconut sugar (or any other sugar)
1 egg
1 egg yolk
2 teaspoons vanilla extract or 1 pod of vanilla bean
Pinch of salt
100g dark chocolate
2 teaspoons coco powder
3 tablespoons coconut oil
3 teaspoons rice flour (or 3 tablespoons plain flour)

Method:
1. Pre-heat the oven at 180C. Prepare two ramekins with coconut oil all around.
2. Mix the sugar, egg, egg yolk, vanilla extract and salt. Set aside for around 10 mins.
3. Melt the chocolate and coconut oil in the microwave (twice for 30 seconds each time).
4. Mix the chocolate batter with the egg batter.
5. Add the flour, mixing only until combined and avoiding mixing for too long.
6. Bake for 12 minutes and rest for a few minutes before serving.
7. Enjoy with icing sugar, ice cream or cream!
