GF Banana bread
Ingredients:
- 3 ripe bananas
- 200g ground almonds/ almond flour
- 4 eggs
- 3/4 cup walnuts
- 1/3 cup melted coconut oil
- 2/3 cup coconut sugar or maple syrup
- 1/2 teaspoon bicarbonate of soda
- 1 teaspoon of vanilla extract
- a pinch of salt

Method:
1. Preheat your oven to 175 C, chop the walnuts (if preferred), line a standard banana bread/ lemon cake etc cake tin with baking paper.
2. Melt the coconut oil and leave to cool.
3. Mash 2 bananas in a large bowl and whisk in the eggs.
4. Add the coconut sugar/maple syrup, vanilla extract, ground almonds, bicarbonate of soda and salt. 5. Combine well and stir in the cooled coconut oil.
6. Once well combined, mix in the walnuts.
7. Pour the mix into your tin, decorate with the remaining banana.
8. Bake for approx. 45 minutes at 175C. The bread is ready when a knife comes out clean.
