Chocolate and pear cake
Ingredients:
4 small pears
150g black chocolate
about 40 ml coconut milk
120g butter
120g sugar
4 eggs
80g almond flour
40g flour (I use GF self-raising)
1 tablespoon cacao powder
1 teaspoon baking powder
Pinch of salt

Method:
Pre-heat the oven to 180C.
1. Melt 75g chocolate with half of the milk for about 30 seconds in the microwave and set aside.
2. Beat the sugar with the butter until fluffy.
3. Incorporate the eggs, one by one, into the butter-sugar mixture.
4. Mix in the melted chocolate and then the dry ingredients.
5. Pour half of the mixture into a lined 'banana bread tin' and place whole, peeled pears long-side, like in the picture then pour in the remaining cake batter.
6. Bake at 180C for 30 minutes and then lower the temperature to 150C for another 15 minutes.
7. Leave the cake to cool for at least 15 minutes before eating, letting it set.
8. For the chocolate sauce, melt the remaining chocolte and milk and pour over the cake.
