Ingredients (makes 4 portions):

For the rice:

- 1 cup of rice (risotto type i.e Arborio) 

- 3/4 cup of milk (I like coconut milk)

- 2 eggs (could be omitted) 

- 1 vanilla pod/ 2 teaspoons vanilla extract with real vanilla beans  

- pinch of salt

 

Fruit: 

If with strawberries:

- approx 7 strawberries (cut into 1/4)

- 1 teaspoon of coconut or brown sugar

- 2 teaspoons of butter

If with with apple:

- 2 apples (peeled and chopped into cubes)

- 1 teaspoon of coconut or brown sugar

- 2 teaspoons of butter

- 1 heaped teaspoon of cinnamon

Method:

1. Pre-boil the rice for about 10 minutes (doesn't have to be fully cooked) and set aside.

3. Pre-heat the oven at 150 C. 

2. Prepare the fruit: put all of the ingredients in a cast-iron pan (or any pan that you can use in the oven) and fry on low heat until the sugar is melted/ the fruit is slightly softer.

3. In a bowl, mix the eggs with the milk and vanilla and add the rice. Pour the mixture over the fruit.

4. Bake for approx 20 minutes or leave for longer if you prefer a crispier top.
